Hector Rodriguez, Director of Academic Studies

Hector Rodriguez has been involved in the hospitality industry for 27 years as general manager, owner operator and senior executive of various hospitality companies, and as trainer and educator in the industry has developed expertise in the following areas which are highly relevant to this venture:
  • Design and development of Hospitality Information systems
  • Design and development of new courses and curriculum
  • Production of hand outs and manuals for Diploma and Advanced Diploma courses
  • Mapping of courses to AQF standards
  • Production of assessments and performance evaluation methods
  • Setting up of Policy, procedure and systems to AQF standards
  • A thorough understanding of the National Training Package and the "New Code"
  • A network of contacts in the hospitality industry as a whole
  • A thorough understanding of the training requirements that hotel and restaurants demand
  • Opened hotels through out the world and managed and directed major operations and projects from inception to opening.
  • Leased own Island resort
  • Negotiated major contracts with landlords, universities and governments.
  • Enjoyed a very low staff turnover due to training, trust and understanding of values of employees.

Leslie Cox, Director

Leslie Cox spent ten years in the accounting professional followed by 20 years in senior financial management roles in hospitality, property and telecommunications industries and is currently a financial consultant ad finance broker.
Leslie has been involved in adult education for many years as a student and spent two years as an adult educator. His belief in the Australian hospitality industry and the need for high quality training has brought him to this exciting venture.

Brook Bindley, Operations Manager

Brook Bindley has a Bachelor Degree of Hotel Management, Majoring in Human Resource Management from Griffith University, Gold Coast. Brook has 8 years experience in hospitality and a diploma of hospitality management.
Brook has gained industry experience through several roles in hospitality; Duty Manager, Receptionist, Public Relations Supervisor, Cruise Attendant, Restaurant Supervisor, Bar and Casino Attendant.
Brook's experience has led her to work and develop her knowledge through several leading hotel chains;

Brook has identified that the Australian Academy of Hospitality Managements Global Position is the Key to Maintaining the high level of hospitality education we ensure our students receive. Thus her management focus is on marketing our college to both potential students and potential post graduate employers through the development of international internships. AAHM is fortunate that the high caliber of students we create have a tendency to market themselves and are therefore fast becoming highly sort after.

David Feighan, Marketing Manager / Hospitality Lecturer

With over 13 years of Hospitality experience David has worked in 5 star Hotels such Burswood Resort Hotel to Planet Hollywood Sydney. He has had experience in many aspects of the Hospitality industry such as Bar, Restaurant, Entertainment, Events, Bottleshop, Security and Management. From working at Planet Hollywood Sydney David became Planet Hollywoods Barman of the year in 2000, the first Austarlian ever to work at Planet Hollywood Sydney Bar and went on to become one of Australias most talented Bar Flairers and has won the Smirnoff Flairing competitions in 2000, 2002 & 2004 and second place in his first competition after 6 months of flairing. He has also been VIP security for movie stars and rock and roll stars and an Events Coordinator as well as MC and Comedian for many International Hollywood VIP events. David also offers his creative flair in Graphic Design, Public speaking and over 10 years in Stand up Comedy. David not only brings to the college many years of experience, skills and knowledge in many aspects of Hospitality but also offers his own flair that makes learning fun and exciting.

Emma Wright, Admissions Manager / Hospitality Lecturer

With over 10 years in the hospitality industry Emma’s industry experience is extensive. Emma started out working as a Banquet attendant at the Hyatt Regency Perth while studying her Advanced Diploma of Hospitality Management. Emma’s hospitality experience has led her to travelling the globe to gain experience. Emma went Colorado USA, where she worked as a Restaurant Supervisor in a Ski Resort gaining valuable skills in staff and restaurant Management. While at the ski resort Emma had the opportunity to fill in as a Breakfast cook. The skills and knowledge learnt during this time have helped Emma to father her career in the hospitality industry. Upon returning to Australia Emma was offered a position of Duty Manager of an upcoming tavern. The tavern and its staff were entered into many of the industry awards doing very well. When the urge to travel was to strong, Emma went to the UK to work at Le Manoir aux Quat’ Saisons, a two Michelin Starred restaurant in Great Milton Oxfordshire, under the tutelage of Raymond Blanc. Emma trained as a Chef d’Rang. Breaking from hospitality Emma worked her way to a Store Manager of Vintage Cellars, where her wine knowledge excelled and started an interest that she will pursue for many years to come.

Benjaminn Stephan, Hospitality Lecturer.

With over 25 years of Hospitality industry experience, Ben has had a rich and varied career. In the Northern Territory, Ben has worked in such venues as the Alyangula Recreation Club as a trainee Manager, Bartalumba Bay Social Club as a bar attendant, short order cook and contract cleaner. In Darwin, as Manager for Sheraton Hotel's lobby bar and functions supervisor for the Diamond Beach Hotel Casino: finishing his time in the NT with 6 years at the Novotel Atrium Hotel as the restaurant supervisor. Upon coming to Perth in 1997, Ben worked as Room Service/Minibar Manager for the Duxton Hotel and Restaurant Supervisor for the Hyatt Hotel. For a change of pace, he has also spent two years working in the maintance department for Mounts Bay Water Apartment Hotel. For the last 9 years, Ben has worked exclusivly for two of Perth's best Italian fine dining restaurants.

Benjamin is now committed to sharing his knowledge and experience to the future hospitality experts of tomorrow.

 

 

Tracey Dickson, HospitalityLecturer.

Tracey has had over 13 years experience in the hospitality industry starting out when she was only 16 years old.

Over the last 13 years Tracey has worked mainly in Hotels and Taverns with a flair for planning events and working with people.

After moving to WA in 2000 Tracey was nominated and became a finalist in the AHA AON Awards for Excellence a prestigious award in Western Australia in the categories:

 *Bar Person of the Year  and

*Hospitality Group Training Youth Grant Award

 As Manager of a Hotel for the past 4 years Tracey has learned and experienced the Hospitality Industry in a more professional manner and continues to Experience it now as a way to keep her knowledge as current as possible.

 Tracey began lecturing Hospitality in 2007 and was given the opportunity to lecture with one of the most prestigious Colleges in WA, Australian Academy of Hospitality management in 2009, a challenge she takes on with as much enthusiasm she has put into the rest of her career.
